Vegan / Gluten Free Coconut Bunny Tail Cupcakes


Hello loves!  Last Sunday was Easter and I hope all who celebrated had a hoppy (hehe) Easter with friends and family!  Today I'm sharing the recipe for these cute little gluten free & vegan coconut bunny tail cupcakes that I made to bring to Easter brunch!  These cupcakes are so delicious, they taste exactly like coconut cream, a perfect treat for a spring party. 

Lets get baking!


Ingredients 

Coconut Cupcakes 

1 cup soy milk

1 teaspoon apple cider vinegar 

3/4 cup granulated sugar 

1⁄3 coconut yogurt (dairy free)

2 teaspoons vanilla 

1/2 cup of gluten free all purpose flour 

1/2 cup coconut flour 

1 teaspoon  baking soda

1⁄4 teaspoon salt



Directions

~Mix soy milk vanilla & apple cider vinegar let sit for 5 min 

~Add in coconut yogurt 

~Slowly mix dry ingredients into the wet until mostly smooth (as little clumps as possible)

~Fill cupcake wrappers with mixture

~Bake at 350 degrees F  18-23 min

~Cupcakes will be a bit soft when done, they will firm up when cooled 



Ingredients 

Coconut Icing 

3 cups powdered sugar

splash of coconut water / milk

1/2 cup vegan butter

splash vanilla extract

Coconut flakes to top


Directions

~Let vegan butter soften 

~Beat all the ingredients together until smooth / fluffy 

~If too soft put into fridge to firm up 

~Ice cupcakes 

~Add coconut flakes to the top 



These cupcakes are dense and moist but have a perfect little  crumble at the top with a sweet coconut flavor.  The Icing adds a perfect amount of coconut creamy sweetness to the dessert.  Coconut Bunny Tail cupcakes are the perfect treat for spring occasions!

Valentines Day♡DIY Decor Gifts & Fashion♡


Happy Valentines day!  Todays post is going to include fashion inspiration as well as some fun DIY decor & gift ideas to celebrate the holiday.  From the perfect gift idea for a loved one to some cute outfit inso for your Netflix night this post has got you covered wether your going out or staying in this Valentines day!

Romantic




This first outfit is perfect for a romantic dinner date with your love.  This lovely cream dress lined with delicate baby pink tulle looks like a piece out of a storybook romance.  This dress from Tobi has such a romantic feminine feeling to it with the tulle, light colors, and sweetheart neckline, perfect for date night.  I paired this dress with stacked gold pearl bracelets, (you can never go wrong with pearls)!  And for a finishing touch I added a cream colored ribbon in my hair to match the dress.

Netflix Night



I for one will be spending Valentines day in my pajamas watching netflix, but I do adore festive pajamas!  This look is perfect for watching Netflix all night or maybe having a festive pamper night with your friends.  I have on these adorable red heart shorts from Aeropostale that I paired with a plain white tank top, so cute and cozy!  I also added this red bow hairband from Claires to match my shorts and complete the Valentines day look!

DIY Gifts 

Lipstick Art 



Lipstick art is a super cute and personal gift idea, a little twist on the classic V-day greeting card.  Just grab a frame, lipstick of your choice, and a pice of paper.  Write your valentines day message in lipstick (don't forget to give the paper a kiss)!

Scented Hearts


These scented fabric hearts are the perfect gift for your loved one!  Just grab printed fabric of your choice and fill your hearts with.... chia seeds?! Fill these hearts with chia seeds  and spray them with your favorite perfume, the seeds will absorb the perfume and keep your fabric hearts smelling just like you!  These cute fabric hearts of your perfume make a cute and personal gift this Valentines day! 

Fun DIY Projects 




This cute heart banner is an easy and fun project to decorate for the holiday!  Just punch out some hearts from festive paper and hang them on a ribbon.  Super cute and easy!




Other touches to decorate for the holiday are adding cute framed quotes or heart shaped pillows too your room.  Frame your favorite quote on love and use it as a decoration on your bedside table or add a cute heart pillow that you made to your bed, both are adorable ways to celebrate Valentines day!

Girly Winter Fashion of December 2015


Happy New year Everyone! Today I thought I would type up a quick post on my favorite looks I wore this December! There were so many holiday photoshoots and parties that there quickly became so many looks I fell in love with, so thats how this post came about! I hope you enjoy all the girly /chic /glam outfit inspiration that you can use for your next winter event! Without further ado here are my favorite looks from the month...

Angelic


This first outfit is called "Angelic", an all white ensemble with  a bit of shimmer.  My A line skirt from Aeropostale is made of a glittering white material, it has that beautiful snowlike shine!  I paired it with a plain white tank from aeropotale to balance out the glitter.  To finish the outfit I added a sheer ribbon with a bit of silver glitter to my hair, completing this angelic look. 

Pretty Pearls


This next outfit is titled "Pretty Pearls", a glamorous look incorporating an excess amount of pearls.  As you may know by now I have an obsession with pearls, they give off an old hollywood look that I adore!  When I saw this mini blouse/jacket with intricate designs dripping in pearls I knew it had to be mine.  Aside from the gorgeous pearls the blouse has 3/4 sleeves, is made of a cream colored light material, and is from Forever 21.  I paired the pearl piece with a strapless shimmering white dress from BCBG with this adorable sweetheart neckline and cute ruffles. All together (paired with pearl earrings of course) this outfit makes me feel like a movie star.     

Pink Party 



This next outfit is titled "Pink party" because it is sooooo flirty fun and pink!  The focus of this outfit is the pastel pink dress from Forever 21, it has short sleeves that bubble out along with a cute bubble skirt giving the outfit a fun personality.  Also on the dress is a subtle swirling design that glistens in the light, beautiful details creating a girly / glam element to the outfit.  For shoes I decided to wear white kitten heels from famous footwear dressing up the outfit even more.   

Lacey Chic



This last outfit I like to call "Lacey chic", it includes lots of lace with a girly shabby chic vibe.  I am wearing this darling cream lace dress from Abercrombie which has a perfect "vintage christmas" vibe.  I paired the dress with a pink ribbon to add the perfect girly touch completing this adorable outfit.

Pink Christmas Holiday Room Tour


Hi I'm Chloe and welcome back to my blog!  Today I'm going to give you all a personal tour of my pink/gold/ girly/vintage  Holiday room makeover!  I added some christmas touches around my room to get in the holiday spirit and I adore the way I decorated.  I am also currently creating videos for my #chloescozychristmas series on my youtube channel HERE  I'm posting 12 Holiday videos in all, so stay tuned!  

Now with out further ado.... lets begin the room tour


Starting with my bed area, I decorated my head board with these beautiful fairy lights.  I tied pieces of pink tulle around the string of lights to look like little bows and then wrapped the lights in snow colored garland.  I also hung these lights on the wall beside my bed.  These  fairy lights are adorable and remind me of a pink snowy wonderland! 


I also changed out my bedspread for the winter!  I have on my bed a pink princess comforter from target with the matching pink and white pillow.  I also put on silk textured sheets because they add to the glam holiday theme.  Lastly I added a fuzzy white blanket and a knit pink blanket to make my bed cozy.




The table beside my bed I decorated in a pink and cozy theme as well!  The focus of my side table is this cute white DIY tulle tree.  I love how it adds a shabby chic vibe to the area and matches the tulle on the lights. I included my two DIY christmas room decor videos at the end of the post, so be sure to check them out to see how I made the tree and the other DIYs in this post!   


Also on my side table I added my little Christmas planner from Target on top of my yearly planner!  It's so cute and perfect for planning christmas lists and videos.  To finish off decorating this area I added a white bow to my Chanel canvas. 



On my vanity I added my Diy ribbon christmas tree that I made last year, sooo girly & shabby chic!  To go along with the vintage theme I added one of the tulle christmas shakers I made this year.  These are so cute to decorate with and are such an original idea.   This one is a pink tulle tree and I also made a white one into an ornament to hang on my family's christmas tree!  Both the videos for these will be at the end of the post.  




I spiced up my picture board for the holidays by using my silver glitter clothes pins!  The background I changed out to a shimmer off white with a classic design while I hung up all pictures in black and white to match.  Also I included a little silver tree below the board!  This side of my room reminded me of the holiday song "silver bells" which is one of my favorites! 




On my dresser I placed another string of lights with tinsel  identical to the string I have on my bed's head board.  Then I made a little pink christmas setup in the left corner. 


I  began by adding this adorable pink bottle brush tree from Target to my dresser, but I decorated it!  How?  With vintage looking beads I found at the craft store, such a cute idea!


Then I filled a small vase with gems, mini ornaments, and pearls! Such an easy idea that adds a festive, glam touch to the setup.  An added pink ribbon tree to my setup completes my own little pink forest!  This tree is so girly and decorated with pearls and bows (two of my favorite things), video on how to make it below!  



The last little section of my room I decorated is my favorite, displaying my little gold christmas tree!  I bought this tree at Target and I love it!  I decorated with mini pastel / gold  ornaments and beads of pearls.  This tree is so beautiful and it makes me happy just looking at it.  For under the tree I decorated a cute gold glitter box and then added my favorite Too faced cosmetics boxes to the mix.  I'm obsessed with the girly / vintage theme of Too Faced's packaging and the boxes look lovely under my tree.

Vegan & Gluten free Thanksgiving Recipes


Happy Thanksgiving everyone! Being a vegan that's gluten free I get lots of questions daily: "what do you eat", "how do you live", "why".  I'm Vegan for the animals, the environment,  and my health, (yes I do get more than enough protein).  Also I've been gluten free since I was 8 because of a severe intolerance.  Eating this way makes me happy and I FEEL GOOD when eating this yummy food!  Today I thought I would share all the recipes I'm bringing to thanksgiving dinner to share with my nonvegan family.  Three desserts and two sides plus an overview of other foods I enjoy at thanksgiving!  Better grab your apron because we're about to get cooking!

Low fat Vegan Gluten free Pumpkin Pie



So I thought we should start with dessert (because it's obvi the best).  This pumpkin pie recipe is my favorite in this whole blogpost, so if your going to make something make this!  

Ingredients 

Crust: 
2 cups of gluten free flour
1/2 cup pure maple syrup 

Filling:
2 cups pumpkin puree 
1 cup of dairy free milk (I used rice milk)
3/4 cup coconut sugar
1/2 cup gluten free flour
cinnamon & other spices to taste

Directions

~Preheat oven to 350 degrees F

~Mix crust ingredients together 

~Spray pan with a LITTLE coconut oil 

~Form crust into the pan and bake for 7 minutes 

~Mix ingredients for the filling together in a bowl 

~Pour mixture into the crust once the crust has baked for 7 minutes 

~Put back into the oven and bake for about 15 min (watch it) if not done bake for longer

~Let sit in the fridge for around an hour 

~Enjoy


This pumpkin pure is HEAVENLY, the filling is so sweet and the crust has a gram cracker texture!  I will probably be making this for christmas too. 

Raw Vegan no fat nut free Apple Tart




 Most of the time raw desserts contains loads of fat and nuts that some have allergies to.  I created this raw apple tart and it came out wonderful!  It's so sweet and defiantly a recipe you will love if you are fruit obsessed like me.

Ingredients 

Crust: 
1/2 cup DRIED blue berries
1/2 cup DRIED apricots 
7 pitted dates 
water as needed 

Sauce:
10 pitted dates
1tbs cinnamon
water as needed

Other:
3-4 chopped apples 

Directions 

~Blend together crust ingredients in a food processor add water LITTLE  needed, should be dry and sticky consistency 

~Press crust into a pan

~Let set in the freezer for 3o min

~Chop the apples into small chunks 

~Make the sauce by blending ingredients in the food processor add LITTLE water as needed should be thick but creamy consistency 

~Mix the apple chunks with the sauce

~Add mixture on top of the crust

~Once the crust has thawed a bit enjoy


The apple tart came out so delicious, all the autumn fruit flavors went together so nicely!  This dessert can be eaten for breakfast too because its only fruit ;) 

Rich Chocolate Vegan cake with carmel icing 


AHHH this cake is a chocolate lovers heaven!  It's not the healthiest dessert due to the about of fat, but it is SO MUCH cleaner than any non vegan cake you will find, and the taste is out of this world.

Ingredients

Cake:
3oz dairy free chocolate chips
2tbs of pure cocoa powder
3/4 cup hot water
1 cup gluten free flour
2/3 cup pure cane sugar
1 tsp baking soda
6 tbs sesame oil
1/2 cup apple sauce
1tbs pure vanilla extract 

Frosting:
10 medjool dates 
1/2 cup dairy free milk
1/2 cup veagn butter
1 1/2 cups organic powdered sugar 

Directions 

~Preheat oven to 350 degrees F 

~In a small bowl put the cocoa powder & chocolate chips

~Pour hot water into the bowl to melt the mixture 

~Add oil vanilla and applesauce to the mixture and stir 

~In a big bowl mix the dry ingredients 

~Add the wet ingredients to the dry ingredients and mix until smooth

~Spray pan LIGHTLY with coconut oil 

~Add the mixture into the pan and bake for 18 min or until fork comes out clean 

~Let cake set in the freezer for 40 min 

~To make the frosting blend the dates and dairy free milk in the food processor until smooth

~Add in the rest of the ingredients and beat, should be a creamy constancy 

~Let the icing set in the fridge for 10 min 

~Once the cake is cool spread the icing on and add fruit for decoration 

~Enjoy 


This is such a rich and decadent chocolate cake.  The carmel icing paired with the raspberries and chocolate gives this dessert such a unique flavor! 

Sweet Sweet Sweet potatoes 



Why the three sweets? Because these mashed sweet potatoes are sooo sweet.  Very simple to make and a perfect addition to your meal.

Ingredients 

As many sweet potatoes as you want
Vegan Marshmallows
Cinnamon  & Coconut sugar to taste

Directions 

~Cook sweet potatoes however you like, just make sure they are soft

~Add the cooked potatoes to the food processor and blend with skin until they are as smooth as you like

~Put potatoes into a pan with vegan marshmallows on top

~Bake for 7 min  at 350 degrees F or until marshmallows are lightly browned 

~Sprinkle coconut sugar and cinnamon on top to taste

~Enjoy your side that is basically a dessert 

These sweet sweet sweet potatoes are soooo sweet and the good part is they are healthy for you too!  The potato skin is full of nutrients, and although the vegan marshmallows aren't a super food they contain no fat! 

Fall veggie medley


You can't have dinner without veggies! I put together this mix of  fall veggies all with vibrant flavors for my thanksgiving meal.

Ingredients 

Carrots
Sweet Squash
Stream beans
Broccoli 

Directions

~Wash veggies and add them into a pan


~Bake for 30 min at 350 degrees F or until soft

~Take veggies out of the oven and enjoy

This is such a flavorful mix of vegetables, I personally don't add any seasons or oils to my vegetables because I love them so much!  Perfect side to share at  your thanksgiving dinner.

Other foods I will be enjoying this Thanksgiving are Pureed white potatoes, steamed corn and peas, raw veggies, and homemade cranberry sauce that my aunt makes!
