Vegan / Gluten Free Coconut Bunny Tail Cupcakes


Hello loves!  Last Sunday was Easter and I hope all who celebrated had a hoppy (hehe) Easter with friends and family!  Today I'm sharing the recipe for these cute little gluten free & vegan coconut bunny tail cupcakes that I made to bring to Easter brunch!  These cupcakes are so delicious, they taste exactly like coconut cream, a perfect treat for a spring party. 

Lets get baking!


Ingredients 

Coconut Cupcakes 

1 cup soy milk

1 teaspoon apple cider vinegar 

3/4 cup granulated sugar 

1⁄3 coconut yogurt (dairy free)

2 teaspoons vanilla 

1/2 cup of gluten free all purpose flour 

1/2 cup coconut flour 

1 teaspoon  baking soda

1⁄4 teaspoon salt



Directions

~Mix soy milk vanilla & apple cider vinegar let sit for 5 min 

~Add in coconut yogurt 

~Slowly mix dry ingredients into the wet until mostly smooth (as little clumps as possible)

~Fill cupcake wrappers with mixture

~Bake at 350 degrees F  18-23 min

~Cupcakes will be a bit soft when done, they will firm up when cooled 



Ingredients 

Coconut Icing 

3 cups powdered sugar

splash of coconut water / milk

1/2 cup vegan butter

splash vanilla extract

Coconut flakes to top


Directions

~Let vegan butter soften 

~Beat all the ingredients together until smooth / fluffy 

~If too soft put into fridge to firm up 

~Ice cupcakes 

~Add coconut flakes to the top 



These cupcakes are dense and moist but have a perfect little  crumble at the top with a sweet coconut flavor.  The Icing adds a perfect amount of coconut creamy sweetness to the dessert.  Coconut Bunny Tail cupcakes are the perfect treat for spring occasions!

Vegan & Gluten free Thanksgiving Recipes


Happy Thanksgiving everyone! Being a vegan that's gluten free I get lots of questions daily: "what do you eat", "how do you live", "why".  I'm Vegan for the animals, the environment,  and my health, (yes I do get more than enough protein).  Also I've been gluten free since I was 8 because of a severe intolerance.  Eating this way makes me happy and I FEEL GOOD when eating this yummy food!  Today I thought I would share all the recipes I'm bringing to thanksgiving dinner to share with my nonvegan family.  Three desserts and two sides plus an overview of other foods I enjoy at thanksgiving!  Better grab your apron because we're about to get cooking!

Low fat Vegan Gluten free Pumpkin Pie



So I thought we should start with dessert (because it's obvi the best).  This pumpkin pie recipe is my favorite in this whole blogpost, so if your going to make something make this!  

Ingredients 

Crust: 
2 cups of gluten free flour
1/2 cup pure maple syrup 

Filling:
2 cups pumpkin puree 
1 cup of dairy free milk (I used rice milk)
3/4 cup coconut sugar
1/2 cup gluten free flour
cinnamon & other spices to taste

Directions

~Preheat oven to 350 degrees F

~Mix crust ingredients together 

~Spray pan with a LITTLE coconut oil 

~Form crust into the pan and bake for 7 minutes 

~Mix ingredients for the filling together in a bowl 

~Pour mixture into the crust once the crust has baked for 7 minutes 

~Put back into the oven and bake for about 15 min (watch it) if not done bake for longer

~Let sit in the fridge for around an hour 

~Enjoy


This pumpkin pure is HEAVENLY, the filling is so sweet and the crust has a gram cracker texture!  I will probably be making this for christmas too. 

Raw Vegan no fat nut free Apple Tart




 Most of the time raw desserts contains loads of fat and nuts that some have allergies to.  I created this raw apple tart and it came out wonderful!  It's so sweet and defiantly a recipe you will love if you are fruit obsessed like me.

Ingredients 

Crust: 
1/2 cup DRIED blue berries
1/2 cup DRIED apricots 
7 pitted dates 
water as needed 

Sauce:
10 pitted dates
1tbs cinnamon
water as needed

Other:
3-4 chopped apples 

Directions 

~Blend together crust ingredients in a food processor add water LITTLE  needed, should be dry and sticky consistency 

~Press crust into a pan

~Let set in the freezer for 3o min

~Chop the apples into small chunks 

~Make the sauce by blending ingredients in the food processor add LITTLE water as needed should be thick but creamy consistency 

~Mix the apple chunks with the sauce

~Add mixture on top of the crust

~Once the crust has thawed a bit enjoy


The apple tart came out so delicious, all the autumn fruit flavors went together so nicely!  This dessert can be eaten for breakfast too because its only fruit ;) 

Rich Chocolate Vegan cake with carmel icing 


AHHH this cake is a chocolate lovers heaven!  It's not the healthiest dessert due to the about of fat, but it is SO MUCH cleaner than any non vegan cake you will find, and the taste is out of this world.

Ingredients

Cake:
3oz dairy free chocolate chips
2tbs of pure cocoa powder
3/4 cup hot water
1 cup gluten free flour
2/3 cup pure cane sugar
1 tsp baking soda
6 tbs sesame oil
1/2 cup apple sauce
1tbs pure vanilla extract 

Frosting:
10 medjool dates 
1/2 cup dairy free milk
1/2 cup veagn butter
1 1/2 cups organic powdered sugar 

Directions 

~Preheat oven to 350 degrees F 

~In a small bowl put the cocoa powder & chocolate chips

~Pour hot water into the bowl to melt the mixture 

~Add oil vanilla and applesauce to the mixture and stir 

~In a big bowl mix the dry ingredients 

~Add the wet ingredients to the dry ingredients and mix until smooth

~Spray pan LIGHTLY with coconut oil 

~Add the mixture into the pan and bake for 18 min or until fork comes out clean 

~Let cake set in the freezer for 40 min 

~To make the frosting blend the dates and dairy free milk in the food processor until smooth

~Add in the rest of the ingredients and beat, should be a creamy constancy 

~Let the icing set in the fridge for 10 min 

~Once the cake is cool spread the icing on and add fruit for decoration 

~Enjoy 


This is such a rich and decadent chocolate cake.  The carmel icing paired with the raspberries and chocolate gives this dessert such a unique flavor! 

Sweet Sweet Sweet potatoes 



Why the three sweets? Because these mashed sweet potatoes are sooo sweet.  Very simple to make and a perfect addition to your meal.

Ingredients 

As many sweet potatoes as you want
Vegan Marshmallows
Cinnamon  & Coconut sugar to taste

Directions 

~Cook sweet potatoes however you like, just make sure they are soft

~Add the cooked potatoes to the food processor and blend with skin until they are as smooth as you like

~Put potatoes into a pan with vegan marshmallows on top

~Bake for 7 min  at 350 degrees F or until marshmallows are lightly browned 

~Sprinkle coconut sugar and cinnamon on top to taste

~Enjoy your side that is basically a dessert 

These sweet sweet sweet potatoes are soooo sweet and the good part is they are healthy for you too!  The potato skin is full of nutrients, and although the vegan marshmallows aren't a super food they contain no fat! 

Fall veggie medley


You can't have dinner without veggies! I put together this mix of  fall veggies all with vibrant flavors for my thanksgiving meal.

Ingredients 

Carrots
Sweet Squash
Stream beans
Broccoli 

Directions

~Wash veggies and add them into a pan


~Bake for 30 min at 350 degrees F or until soft

~Take veggies out of the oven and enjoy

This is such a flavorful mix of vegetables, I personally don't add any seasons or oils to my vegetables because I love them so much!  Perfect side to share at  your thanksgiving dinner.

Other foods I will be enjoying this Thanksgiving are Pureed white potatoes, steamed corn and peas, raw veggies, and homemade cranberry sauce that my aunt makes!

Happy Mother's day ♡ A note to my Mom


Happy Mother's day everyone!  I just thought I would do a little lifestyle post today.  This is a picture of my beautiful mother who actually looks a lot like me!  


On mother's day I have a tradition of making my mom a "weird" (her word for healthy and innovative) breakfast.  This year I decided to keep it simple and make her a this decorative fruit platter.  I cut cute little strawberries into hearts then added mango, blueberries, blackberries, apples and oranges to the plate.  She loved it! You can never go wrong with fruit! 



A note to my mom, 
Happy mother's day!  I gathered together a few memories from the past year or two for this collage, 8th grade graduation, apple picking, mothers day 2013, you always are up for a good time.  You cheer me on in all of my endeavors while helping me along the way.  You take care of me when I'm sick, listen to my babbling about clothing and makeup, and come to most of my tennis matches.  Although I may not say it often I appreciate you and all the things that you do.  In two years time if I chose to go to college I will miss coming home every day to watch general hospital with you and going on our huge food shopping trips stocking up on every vegetable imaginable.  I just want to say thank you for being amazing mom, I love you, Happy mothers day.

Pinterest Inspired: ♡Pumpkin Decorating, Recipes & Skincare♡


Pumpkin season is upon us, and the pumpkin craze is in full swing!  Everywhere you turn you see pumpkin DIYs, decorating ideas, and of course recipes!  So today I was inspired to make a Pumpkin themed blogpost showing you some ideas on how to decorate pumpkins, make pumpkin recipes, and even how to make a pumpkin face mask!  

All these ideas I found on Pinterest, so yes this is another Pinterest Wednesday blogpost (on a Sunday lol).  If you're new to this series, let me explain.  I just take things I see on Pinterest and recreate them in a blogpost and/or video!  Be sure to check out the Pinterest Wednesday board to keep posted on all of the Past/Present/Future Pinterest Wednesday posts and just comment or message me to be added to the board if you have any pins you want me to recreate HERE 

The specific pumpkin decorating ideas I am going to show you in this post are a glitter pumpkin and a sequined pumpkin & the recipes are are a vegan PSS (Pumpkin spice smoothie) and pumpkin clementines, plus a skincare recipe is a pumpkin face mask!  Also, be sure to watch the video down below that goes along with this post! Sequined pumpkin 



This first DIY Decoration idea is a Sequined Pumpkin.  It is super easy to make and looks really cute as a side table decoration! 


Materials

 ~ Sequins 
~Elmer's Glue 
~Pumpkin (Real or Fake)



Directions

~Place small dots of glue on your pumpkin where you want your sequins to be

~Press the sequins into the glue

~Wait for it to dry

~Once dry your pumpkin is dry it's ready for use!




Glitter Pumpkin 


This DIY Glitter Pumpkin is my favorite DIY in this whole post, because I have a HUGE obsession with glitter!  It also makes for a beautiful centerpiece at any table!


Materials 

~ Loose glitter of several colors; I used brown, gold, and orange
~Gold or any other color spray paint
~Pumpkin (Real or Fake)
~Elmer's Glue


Directions 
 ~Spray paint your entire Pumpkin 

~Once dry apply Elmer's glue to the top portion of the pumpkin ONLY

~One color of glitter at a time, pour it onto the glue

~Apply a bit more glue under where your glitter is (unevenly so it looks like the glitter is dripped onto the pumpkin) DO NOT COVER THE WHOLE PUMPKIN

~Pour more glitter onto that glue

~Place a bit of glue at the top of your pumpkin's stem 

~Pour a mixture of glitter onto that as well

~Wait about 3-4 hours for it to dry

~Place where ever you please to decorate, just a warning that some glitter may get onto the table!



Clementine Pumpkins


This first recipe is the easiest of them all!  They are super cute Clementine Pumpkins, the perfect healthy treat for a halloween party!

Ingredients 

~Cinnamon sticks 
~Clementines  
Directions

~Peel your clementines

~Break a cinnamon  stick in half 

~Sick the cinnamon stick in the center of the clementine 

~Now your clementine pumpkins are ready for a halloween party! 



Vegan Pumpkin Spice Smoothie (PSS)


I call this recipe the PSS (Pumpkin spice Smoothie).  It is a healthy and Vegan alternative to the classic Pumpkin Spice Latte (PSL) from Starbucks, and let me tell you, IT'S DELICIOUS! 


Ingredients

~1 frozen banana
~1 cup of rice milk 
~1/2 cup of pumpkin 
~1 cup of vanilla dairy free yogurt 
~Vanilla 
~Cinnamon 
~Nutmeg 
~Ice
Directions

~Add all of the ingredients into a blender in any order 

~Blend until smooth

~Pour into a cute glass and add a straw 

~Sprinkle some extra cinnamon to the top 

~Then it's ready to drink! 



Pumpkin Face Mask


This last Pumpkin DIY is a face mask!  It is super easy to make and when I use it, it leaves my skin feeling super smooth! 


Ingredients

(Sorry this face mask is not vegan, 
these ingrediants just work wonders on the skin)
~ 1 tbs of honey
~1 tbs of milk 
~2 tbs of pumpkin 
Directions 

~Put all the ingredients into a small bowl in any order

~Stir

~Leave in the fridge overnight to set 

~Take out the next day for use!
